Hubbard Community Cookbook: Chicken Wild Rice Soup

Joan Petersen from Hubbard Radio sent this recipe in for some Chicken Wild Rice Soup.Saute:

  • 3 T. chopped onions
  • 2 T. butter
  • Add slowly while whisking:
  • 1/4 cup flour4 cups chicken broth
  • Cook until smooth

Add:
4 cups cooked wild rice
salt & pepper to taste
Simmer 5 minutes

Add:
1 can cream of celery soup
1 1/2 soup cans of milk
2 cups cooked diced chicken or turkey
Soup is more flavorful if refrigerated overnight prior to serving.
